Belgium Waffles

Mark and I both came from families with a prized waffle recipe, but we found this one to beat them both. It came from a Better Homes & Gardens cookbook we received as a wedding gift. We've made this recipe at least once a month our entire marriage. -Jenae

  1. In a mixing bowl combine flour, baking powder, and salt.
  2. In another bowl beat egg yolks slightly.
  3. Beat in milk and oil.
  4. Add egg yolk mixture to flour mixture all at once.
  5. Stir just till combined but still slightly lumpy.
  6. In a small bowl beat egg whites till stiff peaks form (tips stand straight).
  7. Gently fold beaten egg whites into flour and egg yolk mixture, leaving a few fluffs of egg white. Do not overmix.
  8. Pour 1 cup of batter onto preheated, lightly greased Belgium waffle iron.
  9. Close lid quickly; do not open during baking.
  10. When done, use a fork to lift waffle off grid.
  11. Makes 3 or 4 waffles.
