Grammy Jo's Fruit Salad

This comes from Landon's grandmother (Joyce Hinckley) who made this salad/pudding for the holidays. It is still one of Landon's favorite side dishes for Christmas/Thanksgiving. This was the dish brought to the Linger Longer 8/23!
Ingredients
- 1/3 cup sugar
- 2 Tbsp. Cornstarch
- 1/8 tsp. salt
- 2 cups milk
- 2 egg yolks, slightly beaten
- 2 Tbsp. Butter, softened
- 2 tsp. vanilla
- heavy whipping cream
- powdered sugar
- grapes
- bananas
- apples
- 1 pint whipping cream
Instructions
- Mix sugar, cornstarch, and salt in 2 quart pan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
- Gradually stir at least half of the hot mixture into egg yolks. Stir into hot mixture in sauce pan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.
- Refrigerate to set up.
- Whip 1 pint whipping cream with a little sugar until thick. Add half of this to pudding and add fruit: grapes washed and cut in half, peeled and cut apples and sliced bananas.
- Add more whipped cream to get to the consistency you want.
